Comfort Foods: How To Make Plant-based Meatless Loaf

There's a deeply satisfying charm about comfort food - the type that carries you back to simpler times, warm kitchens, and an age-old sense of nurturing. One such dish is the traditional meatloaf, a timeless classic that holds a place of affection in many a food lover's heart.

But what if we told you the same homey taste could be enjoyed sans meat? Yes, you read that right! Welcome to our exciting culinary journey as we explore the hearty, fulfilling, and irresistibly scrumptious world of meatless loaf.

I take my family's favorite meals and I put a Veganish Kitchen twist on them. These recipes are quick and full of flavor.

 

Ingredients for meatloaf

  • Fresh vegetables; carrots, green and red peppers, onions, and walnuts.

  • Creamy mashed potatoes, no dairy but very creamy

  • Green beans with garlic and shallots

  • Portabella mushrooms.

Preparation of meatless meatloaf

  1. Start with two cups of walnuts in a bowl. Add some boiling water to the walnuts. Set it aside for 20 minutes. This is to get the most nutrients out of them.

  2. Chop the vegetables and put them in the food processor.

  3. With the mushrooms, take a damp cloth and wipe off the dirt. Cut the tips off, chop them roughly, and put them in the food processor. The mushrooms have an earthy taste and meaty texture.

  4. Use the pause setting on the food processor or blender and process the ingredients for a few seconds. Don't let it go for too long because you don't want it to be mushy. You want it to have texture. If you don't have a food processor or blender, you can chop the ingredients small and use a potato masher to mash the ingredients.

  5. Pour the ingredients into a bowl.

  6. Put the walnuts in the food processor.

  7. Smash 2 or 3 cloves of garlic or mince them and put them in the food processor.

  8. Add some cananelo beans to the ingredients in the food processor.

  9. Add some salt, pepper, garlic powder, and onion powder.

  10. When processing, do not let the ingredients be mushy. Instead, let them have some texture.

  11. Pour the mixture into the bowl containing the ingredients you processed prior.

  12. Add half a cup of breadcrumbs to the mixture.

  13. Add a quarter cup of sauce to the mixture. You can use tomato and hot sauce to make the sauce.

  14. Add flax seed eggs to the ingredients.

  15. Stir the ingredients until they are mixed well.

  16. Pour the ingredients into a baking dish that's lined with parchment paper. This makes it easy to pull out the meatloaf from the baking dish.

  17. Pour some sauce on top of the ingredients and spread it evenly.

  18. Put it in the oven that's set at 100 degrees. Let it bake for 20 minutes.

  19. Let the meatloaf rest for at least 20 minutes so it can firm up and cut like a loaf.

Creamy mashed potatoes

  1. Peel and quarter the potatoes. You can use red or white potatoes.

  2. Wash and then boil them for about 15-20 minutes, with salt sprinkled in the pot. To find out if they are ready, poke them with a fork. Strain them.

  3. Put several scoops of butter into the potatoes.

  4. Pour half a cup of dairy-free milk into the mashed potatoes.

  5. Add several scoops of vegan butter.

  6. Mash the potatoes with a masher and finish off the process with a mixer.

  7. Pour the mashed potatoes into a bowl.

Green beans

  1. Put your washed and trimmed green beans into a pot of boiling water. You want them to boil to a "beautiful" green. You want your green beans to be somewhat crunchy; not mushy.

  2. Put the green beans inside a pot of cold water.

  3. Strain the green beans.

  4. Chop the shallots.

  5. Put the stove to medium heat and put the shallots. Fry them until they are a little brown.

  6. Put the green beans in the pans and fry them for about a minute, sprinkled with salt.
